Ingredients
1 1/2 cup whole wheat flour
3/4 cup ground flax seed
3/4 cup oat flour (or oat flax that have been ground)
1/2 cup brown sugar
2 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
2 cups shredded carrots
2 cups shredded apple
3/4 cup milk
2 eggs
1 tsp vanilla
Directions
Combine all dry ingredients is one bowl.
In a separate bowl mix together milk, eggs, vanilla.
Combine dried ingredients with the wet until just moist.
Fill muffin papers.
Bake at 350 for 15 minutes
