Ingredients
6 cups chopped broccoli
¾ cup sweetened dried cranberries or raisins
½ cup pumpkin seeds
¼ cup finely chopped red onion
2 tbsp whole flaxseed
Dressing
1/2 cup light mayonnaise
1/4 flax seed oil
2 tbsp raspberry vinegar
2 tbsp granulated sugar or honey
Directions
In a large bowl place broccoli, cranberries, pumpkin seeds, onion and flaxseed.
In another bowl, combine mayonnaise, flax seed oil, vinegar and sugar. Mix well.
Pour over salad, toss well.
Refrigerate before serving.
